Soul Soup Recipe

This is a soup... Well that's good for your soul! This is an easy-to-make chicken based soup.


Ingredients

  • 1 tbsp oil

  • 2 carrots, thinly sliced

  • 2 stalks celery, thinly sliced

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp gingerroot, minced

  • 2 chicken breasts, cooked (pan fried with salt &pepper and garlic powder)

  • 1 tsp fresh parsley

  • 5 cups chicken broth

  • 1 tbsp tomato paste

  • 1 tbsp soy sauce

  • Salt and pepper to taste

  • 1/2 cup broken spaghettini

  • 1/2 cup frozen peas

Directions

  1. Heat oil, add carrots, celery and onion. Cook for 5 minutes, or until onion is softened.

  2. Add garlic & ginger, sauté for 15 seconds, add parsley, salt and pepper, chicken broth, tomato paste & soy sauce.

  3. Bring to a boil, then simmer for about 25 minutes, until carrots are close to being cooked.

  4. Add chicken and spaghettini and cook until tender, about 5 minutes.

  5. Add peas and cook for about another 5 minutes.
