Soul Soup Recipe

This is a soup... Well that's good for your soul! This is an easy-to-make chicken based soup.

Ingredients
1 tbsp oil
2 carrots, thinly sliced
2 stalks celery, thinly sliced
1 onion, chopped
2 cloves garlic, minced
1 tsp gingerroot, minced
2 chicken breasts, cooked (pan fried with salt &pepper and garlic powder)
1 tsp fresh parsley
5 cups chicken broth
1 tbsp tomato paste
1 tbsp soy sauce
Salt and pepper to taste
1/2 cup broken spaghettini
1/2 cup frozen peas
Directions
Heat oil, add carrots, celery and onion. Cook for 5 minutes, or until onion is softened.
Add garlic & ginger, sauté for 15 seconds, add parsley, salt and pepper, chicken broth, tomato paste & soy sauce.
Bring to a boil, then simmer for about 25 minutes, until carrots are close to being cooked.
Add chicken and spaghettini and cook until tender, about 5 minutes.
Add peas and cook for about another 5 minutes.
